Every time you make cheese you drain off litres of pale whey, and most of it goes down the sink. Mysost is Norway’s answer to that waste: instead of throwing the whey away, you boil it down for hours until the milk sugars caramelize into a firm, brown, fudge-like block that tastes of caramel with a dairy tang. It is not really a cheese in the rennet-and-curd sense — it is concentrated, caramelized whey — but it slices, stores, and eats like one. What mysost actually is

Mysost translates literally as “whey cheese.” When you set milk with rennet, the solids knit into curd and the rest drains away as whey — a thin, sweet, pale-yellow liquid that still carries most of the milk’s lactose plus a little residual protein and fat. Mysost is what you get when you drive off that water over a long, slow boil. As the whey reduces, the lactose concentrates and the heat pushes it through a Maillard and caramelization reaction, turning the mass brown and sweet. No coloring, no sugar, and no aging are required — just time and heat.

It starts as a byproduct — The raw material is whey you already have from a cheese, paneer, or curd batch — mysost turns a waste stream into a second product.

The color is caramel, not dye — Brown comes from lactose caramelizing over hours of simmering. Darker means more reduced and more deeply caramelized.

No curd, no rennet, no rind — Nothing is coagulated or aged. Mysost is concentrated liquid, so it has a dense, fudgy body rather than a curd structure.

The brunost family and how they differ

“Brunost” (brown cheese) is the umbrella term; the members differ mainly by which milk supplies the whey, whether cream is added, and how far it is boiled. Getting the names straight helps you know what you are actually making.

Why you need fresh sweet whey

Not all whey works. Mysost depends on the whey being both sweet — meaning full of intact lactose to caramelize — and fresh, so it has not soured before you start. This rules out the acid whey most home dairy leaves behind.

How to make mysost from leftover whey

The method is simple but slow: strain, reduce, and stir. Plan for an unhurried afternoon — the whey has to lose most of its water before it becomes cheese, and the last stretch needs your full attention so it does not scorch.

    Strain the whey Pour your fresh sweet whey through fine cloth or a mesh sieve to catch stray curd. Start with a large, wide, heavy-bottomed pot — more surface area means faster evaporation.

    Simmer and reduce Bring the whey to a gentle rolling simmer (around 85–95°C / 185–205°C) and hold it there for 2–4+ hours. Volume will shrink dramatically as the water leaves and the liquid deepens from pale yellow to tan to brown.

    Add cream and sugar (optional) For a richer, softer, fløtemysost-style result, stir in a splash of cream partway through, and if you like a deeper caramel note, a small spoon of sugar near the end. Both are optional — the whey caramelizes on its own.

    Stir constantly near the end Once it thickens to a loose sauce, drop the heat and stir without stopping, reaching the corners and base of the pot. This is where scorching happens — a thick mass sitting on hot metal burns in seconds.

What yield to expect

Manage your expectations before you commit an afternoon. Whey is mostly water, so even a big pot boils down to a modest block. You start with almost as much whey as you had milk — roughly 85–90% of the original volume drains off as whey — but only about 6–7% of that whey is solids, and you lose a little to the pot besides.

Texture, flavor, and how to serve it

Finished mysost is firm but a touch softer than Gouda, dense and slightly fudgy, with a smooth body if you whisked it well. The flavor is sweet and unmistakably caramel-like, with a dairy tang that grows sharper in the goat-milk versions. It is closer to a sweet confection than a savory cheese, which shapes how it is eaten.

Slice it thin — Norwegians shave paper-thin ribbons with an ostehøvel (cheese slicer). Thick chunks are cloying; thin slices melt on the tongue.

Sweet-side pairings — Classic over waffles, on buttered toast or crispbread, and in packed lunches. It softens and turns runny on something warm.

Store it wrapped and cold — Wrap tightly and refrigerate; a firm block keeps two to three weeks and freezes for months. Softer prim-style batches are more perishable.

Troubleshooting a batch

Most mysost failures trace back to the last half hour of cooking, when the mixture is thick and unforgiving. Here is how to read and fix the common ones.

  • ×Scorched or bitter: the mass overheated and burnt against the pot. Lower the heat sooner, stir constantly with a corner-reaching spatula, and pull it off the moment it looks like thick fudge.
  • ×Grainy or gritty: the proteins seized instead of staying smooth. Whisk or beat vigorously as it thickens, and avoid a hard, fast boil at the end — a gentle simmer keeps the texture fine.

Frequently asked questions

Is mysost actually cheese?+

Technically no. Real cheese is made from milk curds set with rennet or acid. Mysost is made from whey — the liquid byproduct left after those curds are removed — boiled down until the milk sugars and remaining proteins concentrate and caramelize. It is legally and culturally treated as cheese in Norway, but it contains no rennet-set curd.

What is the difference between mysost and brunost?+

Brunost simply means 'brown cheese' and is the umbrella term for the whole family. Mysost ('whey cheese') is the everyday cow's-milk member of that family. So all mysost is brunost, but brunost also includes goat and blended varieties like ekte geitost and Gudbrandsdalsost.

Can I use acid whey from yogurt or ricotta?+

Not for good mysost. Acid whey — left over from yogurt, cultured ricotta, or acid-set cheeses — is already sour, low in usable sugar, and turns bitter and grainy when reduced. Mysost needs fresh, sweet whey drained from a rennet cheese, used the same day.

Why did my mysost taste burnt or bitter?+

Do I have to add sugar?+

No. The sweetness and brown color come naturally from lactose caramelizing. A small spoon of sugar near the end deepens the caramel note and is common in home recipes, but traditional Norwegian brown cheese gets its character from the whey's own milk sugar alone.

Why is my yield so small?+
