Homemade kombucha has a reputation that swings between miracle tonic and biohazard, and the truth sits calmly in the middle. For a healthy adult brewing with clean equipment and a little care, kombucha is a low-risk drink — its own acidity does most of the protective work. The rare problems that make headlines almost always trace back to a specific, avoidable mistake: mould from poor technique, or metal leaching from the wrong vessel. This guide walks through what can actually go wrong, why the science is reassuring, and exactly how to keep every batch safe.
Why kombucha protects itself
The single most important safety fact about kombucha is that it’s acidic, and pathogens hate acid. A finished brew sits somewhere around pH 2.5–3.5 — comparable to vinegar or orange juice. Most harmful bacteria can’t establish themselves below roughly pH 4.6, and a healthy kombucha batch drops under pH 4.2 within the first few days of fermentation.
This is why brewers obsess over starting each batch with enough strong, already-acidic starter liquid. That liquid lowers the pH of the fresh sweet tea immediately, creating a hostile environment for unwanted microbes during the vulnerable first days before the SCOBY has fully taken hold. Signs a batch has gone bad
When in doubt, throw it out — a batch of kombucha costs pennies to replace, and no probiotic benefit is worth a gamble. Stop and discard if you see any of these:

Caffeine and alcohol: what's actually in it
Because kombucha is brewed from real tea, it carries some caffeine — fermentation reduces but doesn’t eliminate it, leaving roughly a third of the tea’s original amount. Alcohol is unavoidable too: yeast converts sugar into both carbon dioxide and ethanol. Commercial brands filter or control this to stay under 0.5% ABV, but homemade batches routinely run higher.
Warmer fermentation, more added sugar, longer brew times, and a vigorous yeast population all push alcohol higher. A second ferment in a sealed bottle can raise it further. If the alcohol level matters to you — for personal, medical, or family reasons — it’s worth estimating rather than guessing.

- 3Use enough strong starter liquid Add plenty of finished, acidic kombucha from a previous batch (typically 10–20% of the volume) so the pH drops below 4.2 fast. This is your single biggest protection against contamination.
- 4Cover breathable, keep it warm Cover with a tight-woven cloth secured with a band — airflow in, insects and dust out. Keep the jar at 20–26°C, out of direct sunlight. Too cold invites mould; too hot raises alcohol.
- 5Taste and track Sample from around day 7 and stop when the balance of sweet and tart suits you — usually 7–14 days. Tasting as you go prevents over-acidification and runaway alcohol.
- 6Check every batch before drinking Inspect the surface for fuzzy mould, smell for a clean vinegar tang, and reserve strong liquid for your next brew. When anything looks or smells wrong, discard and restart.
