Kombucha is one of the cheapest fermentation hobbies to start — the culture is free once you have it, and the ingredients are just tea and sugar. Almost all of the upfront cost is equipment, and most of that is a single good jar. This guide walks through exactly what to buy, what material to choose, and what to avoid, so you can build a kit that’s safe and lasts for years rather than one you replace after a cracked bottle or a leached glaze scare.
The brewing vessel: glass, wide, and non-reactive
The vessel is the one purchase that matters most. Kombucha is acidic — around pH 2.5–3.5 by the time it’s done — so the material has to be genuinely non-reactive and food-safe. Three properties matter: it should be inert, it should be transparent so you can watch the SCOBY and the liquid line, and it should be wide-mouthed to give the culture plenty of surface area to breathe and build a new layer.
Wide-mouth beats narrow-neck for the same volume: more oxygen exchange at the surface, room for the SCOBY to grow flat, and far easier reaching in to clean or lift the culture out.
What size to buy
For a first vessel, the standard recommendation is a 1-gallon (roughly 4-litre) wide-mouth jar. It makes a meaningful batch without dominating your counter, and it’s light enough to move and clean easily. Scale up only once brewing is a habit.
A 1-gallon batch yields roughly 12–14 cups of finished kombucha, leaving room for the SCOBY and starter liquid. If you already know you’ll brew constantly or for several people, a 2–2.5 gallon continuous-brew vessel is a reasonable first buy — just note it’s heavier and slower to clean.
Continuous brew: choosing a spigot
A spigot only matters if you plan to brew continuously — leaving the SCOBY in a larger vessel, drawing finished kombucha off the bottom tap, and topping it back up with fresh sweet tea. The spigot material and placement are the whole safety question here.
BPA-free food-grade plastic — the standard fitting on most continuous-brew jars; safe with the acid and what most brewers use without issue.
304 / 316 stainless steel — the premium non-reactive choice — durable and inert. Confirm the grade; only these two are truly food-safe against the acid.
Unmarked / cheap metal — avoid — reactive alloys corrode and leach into acidic kombucha. If it doesn't state 304/316, don't trust it.
Spigot height — it should sit above the sediment layer, or let you draw from above it, so you tap clean kombucha rather than settled yeast.
One practical downside of any spigot: it’s an extra part that needs cleaning, and yeast can build up inside the mechanism. A plain jar with no spigot is genuinely lower-maintenance, which is why batch brewing is the usual place to start.
The cover: breathable cloth, not a lid
During the first fermentation the culture needs oxygen and has to vent CO2, so the vessel must be covered with something breathable — never sealed. A tightly-woven cloth held with a strong rubber band is all you need, and it doubles as a barrier against fruit flies and dust.
Bottles for second fermentation
If you want fizz, you’ll do a second fermentation: bottle the finished kombucha, usually with a little fruit or juice, and seal it airtight so the CO2 builds up. This is where the container flips — now you want a tight seal and pressure buildup, so the vessel has to be strong enough to hold it.
