Almost every SCOBY that panics a new brewer is perfectly healthy. Kombucha cultures are lumpy, blotchy, string-trailing, oddly-coloured living things, and they look nothing like the smooth beige disc in a product photo. The good news is that telling a healthy SCOBY from a bad one comes down to a single, learnable distinction: mould. Learn what mould looks like, and everything else stops being scary.
What a healthy SCOBY looks like
A healthy SCOBY is a rubbery, gelatinous mat that ranges from pale cream to tan to deep brown. Young cultures are pale and translucent; established ones darken as they absorb tea tannins over many batches. It should be firm but flexible — pick it up and it holds together and springs back rather than falling apart.
The clearest sign of health is a fresh new layer forming at the surface, where the liquid meets the air. It starts as a thin, pale, opaque skin across the top of the brew and thickens with each batch. Brown yeast strands trailing underneath are not just fine — they’re a sign the culture is busy and thriving.
Cream, tan, or brown, rubbery and wet — the whole range is healthy; darkening comes from tea tannins over time.

Normal things that look like problems
The most common mistake is reading ordinary SCOBY quirks as contamination. A SCOBY is a living cellulose mat built around trapped gas bubbles and yeast pockets, so it is rarely smooth or even. Every one of these is normal and harmless:
The one true danger sign: mould
Mould is the only thing that makes a SCOBY genuinely bad, and it looks nothing like normal yeast or staining. It grows on top of the SCOBY as dry, fuzzy, raised spots — exactly like mould on bread or fruit — usually in circular patches of blue, green, black, or white fuzz. It sits above the surface with visible three-dimensional texture, often with a powdery or hairy look.

If you confirm mould, discard everything — both the SCOBY and the liquid. Mould sends microscopic roots through the culture, so you cannot scrape it off and save the rest. Sanitise the jar and start over. Do not taste it.
Mould vs yeast: the fuzzy test
When something looks wrong, run one simple test in bright light: is it dry and fuzzy, or wet and smooth? That single question resolves nearly every SCOBY scare.
Dry, fuzzy, raised, coloured spots on top — mould — discard the entire batch and SCOBY.
Wet, smooth, brown, embedded or trailing — yeast — completely normal and healthy.
Flat, pale, smooth film across the surface — a new SCOBY layer forming — healthy growth.
Dark blobs or spots inside the mat — yeast pockets or tannin staining, not mould.
Mould is always dry, always fuzzy, and always on top. Yeast is always wet and smooth, whether it’s a dark spot in the mat or a strand hanging below. If it isn’t fuzzy and raised, it isn’t mould.
Wet vs dry, and first-batch quirks
A healthy SCOBY is always wet and slippery, never dry on top. If a SCOBY dries out — say, one that was dehydrated for shipping — it can look dark, leathery, and lifeless, but it is usually still viable and will rehydrate and reactivate in a warm batch of sweet tea. Dryness alone is not mould; dry fuzz is.
First batches are their own source of anxiety. A SCOBY grown from a bottle of raw kombucha, or the first culture from a new kit, is often thin, translucent, patchy, and slow. It may take two to four weeks to form a recognisable layer.
How to revive a struggling SCOBY
A dark, thin, sluggish, or refrigerated SCOBY that shows no mould can almost always be brought back. The goal is a warm, acidic, well-fed environment that lets the culture rebuild strength while staying hostile to mould.
- 1Confirm it isn't mouldy Inspect the surface closely in good light. If there's no dry fuzzy growth, the culture is a revival candidate, not a discard.
- 2Warm it up Move the jar to a spot at 24–29°C / 75–84°F — the top of the fridge or a warm cupboard. Temperature is the single biggest driver of activity; cold cultures barely move.
- 3Give it fresh sweet tea and strong starter Feed it a small batch of sweet tea plus a generous amount of strong, mature starter liquid. The acidity protects it while it recovers and jump-starts fermentation.
- 4Cover and wait Use a breathable cloth cover so the surface bacteria get airflow to build a new layer. Leave it undisturbed for 1–2 weeks and watch for a fresh pale skin forming on top.
- 5Judge by new growth, not looks Recovery shows as a new layer and a mild vinegar tang, not as the old SCOBY becoming pretty. Only give up if there's zero activity after 2–3 weeks at a warm temperature.
The best revival is prevention: every batch should start acidic. Enough strong starter liquid drops the pH immediately and keeps mould out from day one.
