How to Clear & Clarify Mead

Why mead turns out cloudy and how to clear it — patience and cold crashing, fining agents like bentonite, sparkolloid and kieselsol/chitosan, racking, and how to get brilliant mead.

A brilliantly clear mead just looks finished — but fresh mead is almost always cloudy with suspended yeast, and that’s completely normal. The good news is that most mead clears itself given time and a few rackings. When you want to speed it up or tackle stubborn haze, cold crashing and fining agents do the job. Here’s how to get from murky to crystal clear.

Why mead is cloudy

Cloudiness in young mead is mostly suspended yeast plus fine proteins and particles that haven’t settled. As fermentation finishes and the mead sits, gravity pulls these down as sediment and the liquid clears from the top.

Some haze has other causes: fruit meads can hold a pectin haze, and an unfinished, stuck fermentation keeps yeast in suspension indefinitely. Identifying the cause tells you which fix to use.

Patience and racking come first

The gentlest, most reliable method is simply time plus racking. Let the mead sit; as sediment drops, siphon the clear mead off it into a clean vessel, and repeat as more settles.

For many meads this is all you need — no additives, just patience and a few careful transfers.

Cold crashing

To clear faster without additives, cold crash: chill the finished mead close to 0–4°C (32–39°F) for several days up to a couple of weeks. The cold makes yeast and haze clump and fall, leaving clear mead to rack off the top.

Cold crashing is cheap, effective, and a great first step before reaching for fining agents. A spare fridge or a cold garage in winter both work.

Fining agents

When haze is stubborn, a fining agent binds the particles and drops them out. Match the agent to the job:

Bentonite A clay that clears proteins and yeast; often added early. Effective and inexpensive, drops a fluffy sediment.
Sparkolloid A reliable all-rounder for general stubborn haze; mixed hot and added to the mead.
Kieselsol + chitosan A fast two-part system (negative then positive charge) that clears most meads brilliantly within days.

Follow each product’s dosage, add gently, then rack off the compact sediment once it settles.

Fruit meads and pectin haze

If your melomel or cyser stays hazy no matter what, suspect pectin — a natural gel from fruit that ordinary fining won’t touch. The fix is pectic enzyme, which breaks pectin down.

Ideally add pectic enzyme before or early in fermentation of a fruit mead to prevent the haze forming; it can also be added afterward to help clear an existing pectin haze. A simple test: mix a sample with rubbing alcohol — if it forms stringy clumps, it’s pectin.

Where clearing fits in the process

Clarify in the right order so your work isn’t undone:

Why is my mead cloudy?+

Should I clear mead before or after backsweetening?+

Clear and stabilise first, then backsweeten. Clarifying removes the yeast and haze, stabilising prevents refermentation, and backsweetening is the final flavour adjustment. Doing it in that order means the honey you add for sweetness doesn't cloud the mead or restart fermentation.

Why won't my mead clear no matter what?+

The usual culprits are a stuck fermentation (yeast still suspended because it hasn't finished), pectin haze from fruit (needs pectic enzyme), or starch haze. Confirm fermentation is truly complete with a stable hydrometer reading first — a mead that's still working will not clear until it's done.
