Lalvin D47 Best ~15–20°C (59–68°F). Rounded, honey-forward, but throws fusels if too warm — keep it cool.
Lalvin 71B Forgiving across a wider range, softens acids, and tolerates warmer rooms better than D47.
Lalvin EC-1118 Very robust and wide-ranging, ferments cleanly even at cooler and less stable temperatures; great for tough conditions.

What happens when it's too warm

Above the yeast’s range, fermentation accelerates but the yeast gets stressed and produces fusel alcohols — higher alcohols that taste hot, harsh, and solvent- or nail-polish-like. Warm ferments also strip out the delicate floral aromatics that make honey special.

These off-flavours are the single most common result of uncontrolled warm fermentation, and they’re slow to age out. Keeping the temperature down is the cheapest quality upgrade available.

What happens when it's too cold

Below the range, the opposite problem: fermentation slows to a crawl or stalls, and yeast drops out of suspension early. The result is a mead that finishes sweeter and weaker than you intended, sometimes stuck for good.
