Temperature quietly decides how good your mead will be. Ferment it cool and steady and you get a smooth, aromatic mead; let it run hot and you bake in harsh, solvent-like flavours that take months to age out — if they ever leave. Most mead is happiest in the 15–20°C (59–68°F) range, but the exact target depends on your yeast, and holding steady matters as much as the number.

What happens when it's too warm
Above the yeast’s range, fermentation accelerates but the yeast gets stressed and produces fusel alcohols — higher alcohols that taste hot, harsh, and solvent- or nail-polish-like. Warm ferments also strip out the delicate floral aromatics that make honey special.
These off-flavours are the single most common result of uncontrolled warm fermentation, and they’re slow to age out. Keeping the temperature down is the cheapest quality upgrade available.
What happens when it's too cold
Below the range, the opposite problem: fermentation slows to a crawl or stalls, and yeast drops out of suspension early. The result is a mead that finishes sweeter and weaker than you intended, sometimes stuck for good.
Slightly cool, in range — ideal — slow, clean, aromatic fermentation.

Well below range — risk of a stuck ferment left sweet and low in alcohol.
Stability beats the perfect number
A steady temperature at the warm edge of the range beats a “perfect” average that swings up and down all day. Temperature swings stress yeast and can cause off-flavours or dropped fermentation even when the average looks fine.
Pick a spot with a naturally stable temperature and let the batch sit undisturbed, rather than chasing an exact figure in a room that changes 8°C between day and night.
