Nutrients are the single biggest difference between mead and other ferments. Grapes and grain feed their yeast naturally, but honey is almost pure sugar — pitch yeast into honey water alone and you’ll get a slow, stinky, often stalled ferment. Adding the right nitrogen at the right time is what gives mead a clean, healthy fermentation, and it’s easier than it sounds.
Why honey needs added nutrients
Yeast needs nitrogen — measured as YAN (yeast assimilable nitrogen) — to build cell walls and multiply into a strong population. Grape must and wort are naturally rich in it. Honey is not: it’s mostly fructose and glucose with almost no nitrogen.
Starve the yeast and it becomes stressed, fermenting sluggishly and throwing off hydrogen sulfide (rotten-egg smell), fusel alcohols, and other off-flavours — or quitting entirely. Added nutrient prevents all of that.
The nutrient types
Three products cover almost all mead nutrient plans:
The TOSNA approach
TOSNA — Tailored Organic Staggered Nutrient Additions — is the go-to protocol. It uses Fermaid-O, sizes the total dose to your batch volume and starting gravity, and splits it across several additions in the first few days rather than one upfront dump.
Staggering matters because yeast can only take up nitrogen while actively growing, early in fermentation. Feeding in stages matches the supply to that window, giving a cleaner, faster, more complete ferment.

The staggered schedule
A typical staggered nutrient plan runs over the first three days plus one gravity-based addition:
- 124 hours after pitching First dose, once fermentation is clearly active. Stir gently to mix and release CO₂.
- 248 hours Second dose. Swirl or stir to rouse the yeast and degas.
- 372 hours Third dose. The yeast population is peaking and using nitrogen fast.
- 41/3 sugar break Final dose when gravity has fallen about a third of the way from OG toward 1.000. After this point, stop adding nutrient.
How much to add
Nutrient amounts scale with batch size and starting gravity — a stronger must (higher OG) needs more total nitrogen because it’s a bigger fermentation. That’s why a calculator beats a fixed spoonful: it sizes the total Fermaid-O to your batch, then divides it into the staggered doses.
Measure by weight for accuracy where you can. A 1-gallon standard mead needs only a few grams total across all additions, so eyeballing large scoops is easy to overdo.
Common nutrient mistakes
- ×Using no nutrient at all — the top cause of stalled, sulfury mead.
- ×Adding all the nutrient at pitch — wastes it and can stress the yeast.
- ×Adding nutrient (especially DAP) after the 1/3 sugar break — risks off-flavours.
- ×Relying only on DAP — harsh; pair with or replace by organic Fermaid-O.
- ×Guessing the dose — overdosing tastes chemical, underdosing stalls; calculate it.
If a batch starts smelling of sulfur mid-ferment, a small nutrient addition (while still before the 1/3 break) plus gentle degassing often rescues it.
