Cold Crashing Beer & Wine

What cold crashing is and why it clears beer, wine, cider and mead — chilling to near-freezing for a day or two to drop yeast and haze out of suspension. When to do it, how long, and how to dodge airlock suck-back.

Cold crashing is chilling your finished brew to near-freezing for a day or two so that yeast, proteins and haze-forming particles fall out of suspension and settle into a compact layer at the bottom. Rack off the top and you’ve got a far clearer, cleaner beer, wine, cider or mead — with no extra ingredients required.

What cold crashing actually does

During fermentation your vessel is a cloudy suspension: billions of yeast cells, spent proteins, hop debris and polyphenols all drifting in the liquid. Warm liquid keeps them agitated and buoyant. Drop the temperature toward freezing and two things happen.

First, the yeast reacts to the cold by flocculating — clumping together and sinking. Second, chill-haze proteins and polyphenols, which stay dissolved when warm, bind up and precipitate out as the liquid cools. Both settle into a tight sediment layer (the “cake”) on the bottom.

The result is beer that’s visibly brighter within a day or two instead of the week or more it can take to clear at room temperature. It doesn’t change the flavour of a finished beer — it just removes the stuff that makes it cloudy and, in wine, the sediment that would otherwise drop in the bottle.

When to cold crash — finish fermenting first

Timing is the one rule you can’t bend: cold crash only after fermentation is fully complete. Chilling drops the yeast out and effectively halts activity, so any sugar still left unfermented stays unfermented. Package that and you risk flat beer, gushers, or bottle bombs from a slow restart.

The way to be sure is a stable final gravity. Take a hydrometer or refractometer reading, wait two to three days, and take another. If the numbers match, the yeast has finished and it’s safe to chill.

How cold, and how long?

The target is as cold as you can get without freezing — roughly 0–4°C (32–39°F). Colder drops particles faster and more completely; freezing risks slushing the beer and damaging the vessel, so keep it just above.

Most of the clearing happens in the first 24 to 48 hours. High-protein worts, hazy or heavily dry-hopped beers, and slow-clearing cider or mead may want a third day. Past about 72 hours you get diminishing returns — the cake is compacted and extra cold time adds little unless you’ve dosed a fining agent.

The suck-back risk — and how to avoid it

Here’s the trap that catches new brewers. As the liquid and the headspace above it cool, the gas contracts and pulls a partial vacuum inside the fermenter. That vacuum sucks your airlock liquid — or, once the airlock empties, unsanitary outside air — straight down into the beer. A batch ruined at the finish line.

You have several clean ways to prevent it:

Swap to a solid seal Before chilling, replace the airlock with a sanitized solid bung or a piece of sanitized foil. The mild vacuum just holds harmlessly.
Fill the airlock with sanitizer If you keep the airlock on, fill it with Star San solution or cheap vodka instead of water, so anything drawn back in is sterile.
Use a valve or sealed vessel A spunding valve, a CO2-filled balloon or bag over the airlock port, or a pressure-capable fermenter all absorb the contraction without pulling anything unsanitary in.

Cold crash plus gelatin or finings

Cold crashing alone gets you clear beer; adding a fining agent while cold gets you brilliant, sparkling beer. Finings are clarifiers that carry a charge, grabbing yeast and haze particles and dragging them to the bottom faster than gravity alone.

Gelatin is the classic homebrew choice — cheap, effective and easy. The order matters: crash the beer cold first, then add the gelatin, because it works best near 0–4°C.

    Bloom the gelatin Sprinkle about 1/2 to 1 teaspoon of unflavoured gelatin into a small cup of cool water for a 5-gallon batch. Let it hydrate for 10–15 minutes until it swells.

    Warm to dissolve Heat the bloomed gelatin gently to around 60–70°C (150–160°F) until it turns clear and liquid. Do not boil — boiling destroys its clarifying power.

    Stir into cold beer Gently pour the dissolved gelatin into your already-crashed beer and stir softly, trying not to splash or introduce oxygen.

    Hold cold again Return to 0–4°C for another 24–48 hours. You should see a dramatic drop as haze and yeast compact into a firm layer.

Prefer to keep it vegan? Isinglass works but is fish-derived; Biofine Clear (a silica-based fining) is a popular vegan-friendly alternative that clears beer fast in the cold. For wine and cider, bentonite and kieselsol/chitosan two-part kits are common.

Beer vs wine, cider and mead

The mechanism is universal, but each drink has its own wrinkle.

Beer — Crash 0–4°C for 24–72h after stable FG; optionally gelatin. Skip it for hazy styles you want to stay cloudy.

Wine — Called cold stabilization — chill for one to several weeks to also drop tartrate crystals ("wine diamonds") that would otherwise form in the bottle.

Cider — Clears well cold but is naturally slow; give it extra time and consider a fining agent for a bright, still glass.

Mead — The slowest to clear of all. Cold crashing helps, but mead often needs weeks of cold plus finings and patience before it turns crystal clear.

Racking off a crashed batch

Once the sediment has dropped, the payoff is careful racking. The whole point was to separate clear liquid from the cake — undo it with a sloppy transfer and you’ll rouse the sediment back into suspension.

Keep the vessel cold while you transfer if you can. Rack slowly with a siphon or a bottling wand, keeping the intake above the sediment layer and lowering it gently as the level drops. Leave the last centimetre or two of murky liquid behind rather than chasing every drop. If you’re kegging, a floating dip tube pulls the clearest beer from the top and leaves the cake untouched.

Is cold crashing necessary?

Honestly, no — it’s a nice-to-have, not a must. Given time, most beer, wine and cider will clear on their own at cellar temperature. Cold crashing just gets you there in days instead of weeks, and pulls extra yeast out before packaging.

Frequently asked questions

Do I have to cold crash my beer?+

No — cold crashing is optional. It speeds clarity and drops sediment, but time alone will clear most beer if you're patient. It matters most for kegged or bottled beer you want bright quickly, hazy styles you want to polish, or when you're bottling and want less yeast carried over. For a NEIPA or hazy style, many brewers skip it entirely to keep the haze.

Will cold crashing stop fermentation before it finishes?+

It can, which is why you confirm a stable final gravity first. Chilling drops most yeast out of suspension and slows the rest almost to a stop, so any unfermented sugar left will still be there when you package — a risk for over-carbonation or bottle bombs. Take two gravity readings two to three days apart; if they match, fermentation is done and it's safe to crash.

How long should I cold crash?+

24 to 72 hours is the normal range. Most yeast and chill haze drops in the first 24–48 hours. Stubborn haze, high-protein worts, or dry-hopped beers may benefit from a third day. Beyond about 72 hours you get diminishing returns unless you've added finings — the sediment is already compacted and colder time adds little.

What is airlock suck-back and how do I prevent it?+

As the beer and its headspace cool, the gas contracts and creates a slight vacuum that can pull airlock liquid — or worse, unsanitary air — back into the fermenter. Prevent it by replacing the airlock with a sanitized solid stopper or foil before chilling, filling the airlock with sanitizer or vodka instead of water, fitting a spunding valve or a CO2-purged balloon, or using a sealed pressure-capable fermenter that simply pulls a mild vacuum harmlessly.

Should I add gelatin before or after cold crashing?+

Cold first, then add gelatin — the finings work best in cold beer near 0–4°C. Bloom the gelatin in cool water, warm gently until dissolved (do not boil), stir into the chilled beer, and give it another 24–48 hours cold. Gelatin grabs yeast and haze particles and drags them down, often producing noticeably brighter beer than crashing alone. Vegan brewers can use isinglass alternatives like Biofine Clear instead.

Does cold crashing work for wine, cider and mead too?+

Yes. The same principle — cold shocks yeast and haze out of suspension — is standard in winemaking, where it's called cold stabilization. For wine it also drops tartrate crystals (harmless 'wine diamonds') that would otherwise form in the bottle. Cider and mead clear beautifully with a cold crash, though both are naturally slow to clear and often reward extra time plus a fining agent.

Do I need a fridge, or can I use my environment?+

A spare fridge, kegerator or temperature-controlled chamber is ideal because it gets you to 0–4°C reliably. In winter a cold garage, shed or unheated room works if it holds steadily near freezing. The colder and steadier the temperature, the faster and more complete the clearing — a fluctuating 10°C garage will clear far more slowly than a steady 2°C fridge.
